When I'm out and about I record things on a portable recorder, my phone or sometimes my iPod.
I have an H2 as well as backup, but I've never needed the backup so far.
I also carry a Nexus 7 to read on when I am travelling.

I edit audio on REAPER at the moment.
I used Cool Edit (old skool eh?) for a long time.
I have also started using Transcribe by Wreally.
Other
There never seems to be enough time to read and I like having the Kindle app on there for more books that I would normally carry.
